A great breakfast idea. Mix with fromage frais or greek yogourt or put in Weetabix.

Can be frozen in cubes.

INGREDIENTS:

Apples
Dried apricots
Optional – a cinnamon stick for cooking
Fresh apple juice / water

METHOD:

Peel and roughly chop the apples.
Chop the dried apricots.

Cook in fresh apple juice or water.
Simmer with a lid on for 20-25 minutes until the apples are soft.

Drain the spare liquid and keep (freeze)

Set the compote aside to cool, then mash or puree.
