Fist mix the dry ingredients: coconut, almond and pistachio. Melt the chocolate over a bain-marie, add the coconut cream, vanilla extract and the honey. Mix till the consistence looks right. If too sticky, add coconut or almond powder, it not holding together, add more coconut cream. Form little ball using your hands. Roll them in coconut and place them on a tray or plate. Leave in the fridge to harden for at least an hour. These will keep for a month in the fridge!
